PAT'S PINEAPPLE SQUARES 
1 lb. butter
1 egg
4 c. flour
1 c. sugar
1 tsp. vanilla
1/2 lb. coconut (fine)

Cream butter and sugar. Add egg, vanilla, flour and coconut. Mix. Lay out on large cookie sheet. Reserve some cookie dough.

FILLING:

1 can crushed pineapple (No. 2 can)
1 can applesauce (15 oz.)
4 tbsp. tapioca
3 tsp. sugar

Boil filling until thick. Spread over top of cookie dough. Spread reserved dough over top. Bake at 350 degrees for 30 minutes.
