BUCKAROO STEW 
6 thick slices bacon, cut into 1/2 inch pieces
2 med. onions, sliced or chopped
3 ribs celery
6 potatoes, peeled & sliced
2 c. water or 1 can chicken broth
3/4 tsp. salt
1/4 tsp. black pepper

Cook bacon, add onion and celery, stir fry. Add potatoes, stir thoroughly, add water or chicken broth. Cook until just tender. (NOTE: I microwave bacon, then clip -- less fat that way.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
