CHINESE CHICKEN SALAD 
3/4 c. peanut butter
3 tbsp. soy sauce
2 tbsp. dry mustard
1/2 c. cider vinegar
1/4 c. water
1 tbsp. toasted sesame seeds
3 cloves garlic, minced
1/2 tsp. freshly ground white pepper
1/2 tsp. crushed red pepper flakes
5 whole, boned, skinned chicken breasts, cooked & shredded
1 c. cooked ham, cut into julienne
3 tbsp. chopped peanuts
1 scallion, thinly sliced
1/2 cucumber, peeled, seeded, & cut into julienne
1 head Chinese cabbage, shredded

1. To make dressing, beat together peanut butter, soy sauce, mustard, vinegar, water, sesame seeds, garlic, white pepper and red pepper flakes until blended.

2. Combine chicken and ham. Add dressing; toss until meats are well coated.

3. Add peanuts and scallion. Toss well.

4. Arrange cucumber and cabbage in salad bowl and top with salad. Serves 6 to 8.
