DATE PINWHEELS 
1/2 c. butter
1/2 c. granulated sugar
1 egg
1/8 tsp. salt
1/2 c. light brown sugar
1/2 tsp. vanilla
2 c. sifted flour
1/4 tsp. baking soda

Cream butter; add sugars, vanilla and egg. Beat until light. Add sifted dry ingredients and mix well. Chill until firm enough to roll. Half dough. Roll each half on floured wax paper into a 12 x 9-inch rectangle. Spread with filling; roll up tightly from end. Wrap in paper; chill overnight. Slice 1/8-inch thick.

Bake on lightly greased cookie sheets in 375°F oven for about 10 minutes.

Filling:

1 (7 oz.) pkg. pitted dates
1/4 c. sugar
1/3 c. water
dash of salt
1 c. chopped nuts

Cut dates in small pieces and bring to boil with sugar, salt and water; simmer 5 minutes, stirring often. Add nuts and cool.
