PUMMIES 
1/2 c. butter, room temperature
1/2 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg, lightly beaten
1 c. cooked or canned pumpkin
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt

ONE of the following groups of ingredients:
2 tsp. rum flavoring
1 c. semi-sweet chocolate morsels

OR:

2 tsp. maple flavoring
1 tsp. grated lemon zest
1/2 c. chopped crystallized ginger

OR:

1 tbsp. pumpkin pie spice
1 c. raisins
1/4 c. coarsely chopped nuts

In a large mixing bowl with an electric mixer, beat butter, brown sugar and granulated sugar. Stir in egg and pumpkin. Add rum flavoring or maple flavoring, if using.

Mix flour with baking soda and salt. Add lemon zest or pumpkin pie spice, if using. Add flour mixture to pumpkin mixture, stirring until well mixed. Stir in chocolate morsels, ginger, or raisins and nuts, if using.

Drop dough by teaspoonfuls onto lightly greased baking sheets. Bake in a preheated 375 degree oven 15 minutes, or until cookies are firm. Remove from baking sheets immediately and allow to cool completely before storing. Makes about 5 dozen cookies.
