CURRIED LAMB 
3 lbs. lamb, cut into 1/2 inch cubes (sprinkle with salt)
2 lg. onions, chopped fine
1 stick butter
4 cloves garlic, pressed
1 lg. can tomatoes, crushed and drained
1 1/2 tsp. turmeric
1 tsp. curry powder
1/2 tsp. crushed red hot chili peppers
1 c. golden raisins
1 c. toasted slivered almonds

Saute onions in butter until soft. Add lamb cubes and garlic. Cook, stirring until lamb is lightly browned. Add raisins and seasonings. Cover and simmer until lamb is tender (45 minutes).

Add almonds before serving. Serves 6.

You can use leg of lamb, to make the cubes. Also, prepare this day the day before, and it tastes better. Just reheat over low heat. Serve with rice.
