FRENCH-FRIED CHICKEN BITES 
1 lb. boneless chicken breast
1/2 tsp. salt
1 egg
1/2 c. all purpose flour
1/4 c. milk
1 c. cracker crumbs
Vegetable oil

Cut chicken into bite size pieces. Sprinkle with salt, set aside. Combine egg, flour and milk, stirring until smooth. Dip chicken in egg mixture, roll in cracker crumbs. Fry chicken in 1" hot oil, 325 degrees until golden brown. Drain on paper towel. Yield: 3 dozen.
