WESTERN SANDWICH 
8 slices bread or toast
butter, softened
2 tbsp. shortening
1 sm. onion, chopped (about 1/4 c.)
1/2 sm. green bell pepper, chopped (about 1/4 c.)
4 eggs
1/2 c. chopped fully cooked smoked ham
1/4 tsp. salt
1/8 tsp. pepper

Spread bread with butter. Heat shortening in 10-inch skillet over medium heat until hot. Cook and stir onion and bell pepper in shortening about 5 minutes or until onion is tender. Beat eggs slightly in medium bowl with fork or hand beater. Stir in ham, salt and pepper.

Pour egg mixture into skillet. Cook over low heat just until set. Cut into 4 wedges. Turn wedges over with pancake turner. Brown slightly. Serve wedges between bread slices. Yield: 4 sandwiches.
