BAKED TOMATOES (EA) 
6 large tomatoes, scoop centers out into bowl. In a frying pan put a piece of butter and add a small onion, chopped and 1/2 cup chopped celery, steam until half done. Put in with tomato centers and add 1 tablespoon minced parsley, salt and pepper to taste and 1 beaten egg. Fill tomatoes and place a small pat of butter on each. Bake until light brown on top and tomatoes are tender.
