IRISH MEAT LOAF | |
1 1/2 lbs. ground beef 1/2 lb. ground pork 3 c. soft bread crumbs 1 egg 1/2 c. minced onion 3/4 c. milk 2 tsp. salt 1 1/4 tsp. ginger 2 c. peeled, chopped apples 1 1/2 c. mashed potatoes 1 (10 oz.) pkg. frozen chopped broccoli, cooked & drained 1/2 c. shredded cheddar cheese Blend beef and pork in a bowl. Add next 6 ingredients, mix to blend. Stir in apples. Shape into loaf on jelly roll pan. Bake in preheated 350 degree oven for 45 minutes. Drain off excess grease. Combine potatoes and broccoli; frost loaf with potato mixture. Sprinkle top with cheddar cheese. Bake 15 minutes longer. Let stand about 5 minutes before removing to warm platter. |
