GRILLED RED FISH 
1 tsp. creole seasoning
1 tsp. dried whole basil
1 tsp. dried whole oregano
1/2 tsp. white pepper
1/2 tsp. garlic powder
1/2 tsp. Italian seasoning
6 red fish fillets (about 2 lb.)
1/2 c. dry white wine
1/4 c. olive oil
12 slices bacon, partially cooked
Vegetable cooking spray

Combine first 6 ingredients; mix well. Divide seasoning mixture in half. Set half aside. Sprinkle remaining half on fish fillets. Place fillets in a shallow baking dish and pour wine over fillets. Cover and marinate in refrigerator 12 hours, turning fillets occasionally.

Drain fillets, rub both sides with olive oil. Sprinkle reserved seasoning. Wrap 2 slices bacon around each fillet. Secure with wooden picks. Spray a fish basket with cooking oil. Place fish in basket. Grill fish over medium hot coals 7-10 minutes on each side or until fish flakes easily when tested with fork.

Remove fish from grill. Remove wooden picks. Place fish on serving platter. Yields 6 servings.
