PUMPKIN BARS 
2 c. sugar
1/2 c. vegetable oil
1 (16 oz.) can pumpkin
4 eggs, beaten
2 c. Bisquick
2 tsp. cinnamon
1/2 c. nuts
Cream cheese frosting

Preheat oven to 350 degrees. Beat sugar, oil, pumpkin and eggs on medium speed 1 minute. Stir in baking mix, cinnamon and nuts. Pour into greased and floured 15 1/2" x 10 1/2" x 1" pan (use large Pyrex dish). Bake 25 to 30 minutes. Test with cake tester, frost when cool.

CREAM CHEESE FROSTING:

2 c. powdered sugar
1 (3 oz.) pkg. softened cream cheese
1/3 c. butter, softened
1 tbsp. milk
1 tsp. vanilla

Beat cheese, butter, milk and vanilla until creamy. Stir in sugar until smooth. Keep in refrigerator. Cut in 1" x 3 1/2" slices. Serves a crowd.
