BEEF AND RICE SKILLET FIESTA 
1 lb. of ground meat
1 tbsp. salad oil
1/4 c. diced onion
2 tsp. salt
1/4 tsp. pepper
1 tsp. chili powder
1 (16 oz.) can tomatoes
1 (12 oz.) can whole corn
1 1/2 c. bouillon or 1 bouillon cube dissolved in 1 1/2 c. boiling water
1/2 c. thin strips of bell pepper
1 1/2 c. Minute Rice

Brown meat quickly in oil in skillet leaving meat in chunks, add onion. Cook over medium heat until onion is tender. Add seasonings, tomato, corn and bouillon. Bring to a boil. Stir in peppers and bring to a boil again. Stir in rice, cover and simmer. Fluff with fork.
