ZUCCHINI SQUASH BREAD 
2 c. sugar
3 eggs
1 c. oil
3 c. flour
3 tsp. cinnamon
1 tsp. baking soda
2 tsp. salt (I use 1 tsp.)
2 c. grated zucchini, peeled & seeds removed
2 tsp. vanilla
1 c. chopped pecans
1 c. floured raisins
1 tsp. baking powder

Beat well sugar, eggs and oil. Add gradually while stirring; flour, cinnamon, baking soda, baking powder and salt. Then add zucchini, vanilla, nuts and raisins. Beat together and spoon into greased pan. Bake in 2 loaf pans or 1 tube pan. Grease and flour pans. Bake 1 hour and 15 minutes at 350 degrees.
