DIRTY RICE 
2 lbs. raw rice
2 lbs. red onions
1/2 lb. bacon drippings or shortening
1 lb. gizzards and livers
3 cloves garlic, minced
1 bunch green onions, chopped
1 sprig parsley, chopped
1 pod red pepper
4 1/2 c. water
Salt and pepper to taste

Cook rice until almost done (about 25 minutes). Chop red onion very fine and brown in shortening or bacon drippings. Chop giblets and cook with red onions until brown. Add remaining ingredients. Pour mixture over cooked rice. Simmer until water is absorbed. Turn into large baking pan and dot with butter. Brown in 350 degree oven for about 15 minutes.
