LAZY COOKS POTATO SALAD 
2 lbs. new potatoes
1 1/2 c. mayonnaise
1 tbsp. mustard
1 tbsp. vinegar
1 tsp. salt
1/4 tsp. pepper
1 med. onion, chopped
2 stalks celery, chopped
4 boiled eggs

Scrub potatoes and cut into chunks (do not peel potatoes!). Put potatoes in water and boil until tender.

Mix together in 4 quart bowl mayonnaise, mustard, vinegar, salt and pepper. Add potatoes to mixture and toss in onions and celery. Cut boiled eggs into small piece and add to top of salad. Chill for at least 4 hours before serving.
