CARROT MUFFINS 
2 c. flour
1 1/4 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
3 eggs, beaten
1 1/2 c. grated carrots
1 1/2 c. grated apples
3/4 c. coconut
1/2 c. chopped dates
1/2 c. chopped pecans
1/2 c. oil
1 tsp. vanilla

Mix all ingredients together in order given. Place into greased muffin tins. Bake at 375 degrees for 18 to 20 minutes. Makes 24 muffins.
