CREAMY TEXAS CHALUPAS 
2 tbsp. butter
3 oz. cream cheese, diced
Salt and oil
1 onion, chopped
4 flour tortillas
Diced green chilies to taste
1 c. or more diced cooked chicken
1 c. or more Monterey Jack cheese, grated
1/3 c. whipping cream
For garnish: chopped green onions, sliced black olives, juice of one lime

Preheat oven to 375 degrees and grease 9x13 dish. Melt butter and saute onion. Remove from heat and add chicken, chilies and cream cheese; add salt to taste.

Heat 1/4 cup oil in skillet and dip and fry each tortilla for several seconds. Drain on paper towels. Fill each tortilla with chicken filling. Roll and set seam side down in greased pan.

Cover evenly with whipping cream and sprinkle with cheese. Bake uncovered 20-25 minutes. Garnish with green onions and olives. Squeeze lime juice over just before serving. Serves 4.
