BASIC SWEET DOUGH | |
1 c. milk 1/2 c. sugar 2 tsp. salt 1/4 c. butter 2 tbsp. yeast 2 eggs 1/2 c. water (115-120 degrees) 5 c. flour Variation: 1/2 c. honey in place of sugar 2 c. whole wheat flour instead of white 1. Scald milk. Add to sugar, salt and butter in mixing bowl and stir well. 2. Soften yeast in warm water and add to ingredients. Add eggs. 3. Add enough flour to make a soft dough that can be handled on a board. 4. Turn on lightly floured surface and knead until dough is elastic, smooth and does not stick to board or hands (10 minutes). 5. Form into a ball, place in a greased bowl, grease top. Cover and let rise until doubled (about 1 1/2 hours). 6. When light, punch down. Let stand 10 minutes. 7. Shape into bread, rolls, tea rings, Christmas trees, coffee cakes, etc. 8. Let rise until doubled in bulk (about 1 hour). 9. Bake in a 350 degree oven. |
