AUNT MILLIE'S PEACH COBBLER | |
2 c. sliced fresh peaches (more, up to 5 c. if available) 1/4 tsp. salt 2 c. sugar 1 c. flour 2 tsp. baking powder 1/4 lb. butter 1 egg, beaten 1/2 c. (or less) milk 1 tsp. almond extract Add 1 cup of the sugar to peaches; let stand. Will be very juicy. Stir together flour, the other cup sugar, salt, and baking powder. Add to beaten egg enough milk to make 1/2 cup. Add almond extract (mix), pour this mixture into flour (will be thick). Melt the butter in 9 x 12 inch glass pan and put in flour mixture; spread without mixing (DON'T MIX!) as best as possible. Spoon peaches on top of flour, DON'T MIX. Bake 50-55 minutes at 325 degrees (glass), 350 degrees (metal) (glass works best). This recipe was handed down via Dennis' family. There were numerous controversies as to ingredients and proper order, this version was agreed on by and you'll see why. Of all the desserts I serve, this is the most requested - the most gone! |
