HOMEMADE MAYONNAISE | |
For uses in potato salad, macaroni salad, or meat salads. 2/3 c. sugar 3 level tbsp. flour 1/2 tsp. salt 1/2 tsp. paprika 2 whole eggs or 3 egg yolks 2 tbsp. butter 1/2 tsp. dry mustard OR 2 tsp. prepared mustard 1/2 c. vinegar 1 1/2 c. water Mix all dry ingredients. Stir in eggs, vinegar and prepared mustard (if useing prepared instead of dry). Mix until smooth. Add water. Cook over medium heat and stir constantly until thick. Add butter. Cool. Do not stir while cooking. |
