SENATE BEAN SOUP 
2 lbs. small navy pea beans
4 qts. hot water
1 1/2 lbs. smoked ham hocks
1 chopped onion
Salt and pepper to taste

Wash beans and run through hot water until beans are white again. Put beans on stove with 4 qts. hot water and 1 1/2 lbs. smoked ham hocks. Boil slowly approximately 3 hours, in covered pot.

Braise 1 chopped onion in a little butter. When light brown add to bean soup. Season with salt and pepper when ready to serve. Serves 8.
