CONFETTI BROCCOLI CASSEROLE 
2 (10 oz.) pkgs. frozen, chopped broccoli
1 c. mayonnaise
1 (4 oz.) jar diced pimento, drained
4 hard cooked eggs, chopped
2 tsp. prepared mustard
1/4 tsp. salt
24 saltine crackers, crushed
1 c. chopped pecans
6 tbsp. butter, melted

Thaw broccoli until pieces are easily separated. Combine mayonnaise, pimento, chopped eggs, mustard, and salt; stir in broccoli. Pour mixture into greased, shallow 2 quart baking dish. Bake in 300 degree oven 30 minutes. Combine crackers, pecans, and butter. Remove casserole from oven and sprinkle cracker mixture over the top. Return to oven and bake an additional 5 minutes or until crackers are lightly browned. Makes 6 servings.
