PUMPKIN SQUARES 
1 (29 oz.) can pumpkin
1 2/3 cups sugar
2 cups all-purpose flour
2 tsp. cinnamon
1 tsp. salt
4 eggs
3/4 cup vegetable oil
2 tsp. baking powder
1 tsp. baking soda

Stir above ingredients together and pour into a 10x13-inch ungreased pan.

Bake at 350°F for 25 to 30 minutes.

PUMPKIN SQUARE FROSTING:

1/2 (8 oz.) pkg. cream cheese
1 tsp. vanilla
1/2 cup (1 stick) soft butter
2 cups confectioners' sugar

Cream together with mixer.

I have never liked pumpkin pie, but I love spiced pumpkin squares. I looked up this recipe since I lost the one I used last year, and this is ultimately the same as the one I last used. However, I baked mine in a pan that measures 11" x 17" for only 20 minutes, and used 8 oz. of cream cheese instead of 3 oz. for the icing. This makes a much more creamy, and not sickeningly sweet frosting.

My grandmother used to make these and she would use walnuts on top of the frosting. She made sure that they were in small pieces and spinkled them on top.

This is a recipe that is so versatile.... I used maple flavoring in my cream cheese and it is so good. My son who does not like pumpkin asks for this once a week now.
