FRESH APPLE CAKE 
3 c. raw apples, peeled and chopped
1 1/2 c. cooking oil
2 c. sugar
3 eggs
2 1/2 c. sifted flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
1 tsp. vanilla
1 c. black walnuts or pecans, chopped

Peel apples, chop and set aside. Pour oil into large mixing bowl. Add sugar, eggs and beat well. Sift flour together with salt, soda and baking powder. Then gradually add to creamed mixture. Add vanilla. Gently fold in chopped apples. Bake in 10 inch greased tube pan for 1 hour at 350 degrees. Cool, remove from pan and top with sugar glaze.

SUGAR GLAZE:

1 1/2 c. powdered sugar
3 tbsp. water
2 tsp. vanilla

Sift powdered sugar into bowl. Moisten with water. Add vanilla, then drizzle over cake. May need to add more water depending upon consistency. Add nuts to cake top.
