ELDERBERRY JELLY 
3 lbs. elderberries
2 lemons or 1/4 c. juice
1 box pectin
4 1/2 c. sugar

Crush berries and simmer 15 minutes. Add 1/4 cup lemon juice. Measure out 3 cups juice. Add pectin and bring to a boil. Add sugar all at once and boil 1 minute. Remove from heat and skim off foam. Pour into jars, adjust caps and process in boiling water 10 minutes. Makes 4 1/2 cups.
