SPINACH RICE RUZ BI SPANEGH 
1 c. rice, washed
3 bunches fresh spinach, washed and chopped
1 c. water
2 onions, chopped
1/2 c. oil
Juice of 1 lemon
1 tbsp. dried mint, crushed
1 tsp. salt
1 clove garlic
1/2 tsp. black pepper

Brown onion and garlic in oil. Add rice and cook about 1 minute, stirring thoroughly. Add water, salt, and pepper and cook for about 15 minutes. Add spinach and lemon juice. Cover and cook for about 10 minutes or until done and rice is tender. Garnish with dried mint.
