SPINACH RICE SALAD 
1 1/3 c. water
2/3 c. rice
Small bay leaf
1 tsp. lemon juice
1/2 tsp. salt
1/2 c. Italian dressing
2 c. fresh spinach leaves, rinsed & drained
1 med. tomato, diced
1/3 c. green bell pepper, diced
1/3 c. frozen peas
1/4 c. green onion, sliced
1 sm. jar diced pimento
2 tbsp. parsley
4 slices bacon, cooked & crumbled

Bring water, bay leaf and lemon juice to a boil. Stir in rice, cover and reduce to simmer for 20 to 25 minutes. Remove leaf. In bowl gently toss rice with 1/4 cup Italian dressing. Cover and refrigerate until cool. In large serving bowl combine spinach, tomato, bell pepper, peas, onion, pimento, parsley, black pepper and remaining 1/4 cup Italian dressing. Gently stir in cooled rice and cover and chill for 2 hours. Just before serving sprinkle with crumbled bacon. Serves 6.
