FAVORITE FAMILY STEW
1 1/2 lb. sirloin or round steak, cut into bite-size pieces
2 med. 1" sliced carrots
2 med. sliced onions
1 c. sliced celery
4 med. cubed potatoes

TOPPING:

1 (10 1/2 oz.) can tomato soup
1/2 c. water
1 tbsp. salt
1/4 tsp. pepper
2 tbsp. tapioca pudding mix

In 2 or 3 quart covered casserole. Microwave (high) stew meat 8-9 minutes, stirring once or twice until pink color is gone. Layer with carrots, onions, celery and potatoes.

In 2 cup glass measure combine tomato soup, water, salt, pepper and tapioca. Stir to blend; pour on vegetables to cover. Microwave medium-low (30%) 90 minutes. Don't lift the lid. Don't stir. Don't peek.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This recipe is not too bad as long as you do a few things. First, make sure you add enough water to the "topping" to ensure that the liquid almost covers the veggies. Second, adjust the time based on your microwave's wattage. Mine is 1300 watts and between too little liquid and the cooking time I almost had an inedible mess...burnt spots even though added extra water an very overcooked veggies, and I only cooked it 60 min. (And yes, I used 30% power!). Lastly, I think it will be better with some garlic and spices...as well as one sweet potato in place of one of the regular potatoes (I actually did this and it tasted good.)

Definitely worth a try with some "tweaking".
