DILLY BEANS & CARROTS 
3 1/2 to 4 lbs. beans
5 c. pickling vinegar
3 1/2 c. water
4 tbsp. salt
4 tbsp. sugar

Bring this to a boil, this is the brine you will use to fill your jars. 1 1/2 tsp. dill seed or a large fresh dill head 1/4 tsp. crushed hot pepper 1 tsp. mustard

Pack fresh beans or carrots, cut into carrot sticks into jars. Fill to 1/2 inch from top of jar with brine and seal. Process in boiling water bath for 5 minutes.
