FISH WITH GARLIC SAUCE 
1/2 c. butter
1/2 c. finely chopped garlic
2 lbs. fish fillets, salt and pepper
2 eggs - 2 tbsp. milk
2 tbsp. olive oil
Lemon wedges

Melt 6 tablespoons of butter in small pan. Add garlic stirring occasionally (about 15 minutes). Remove from heat and keep warm.

Wipe fish with cloth. Cut into serving size pieces. Lightly sprinkle with salt and pepper on both sides. Also beat eggs and milk together in shallow pan.

In wide frying pan heat 1 tablespoon of butter and 1 tablespoon of oil. Dip fish in egg, one at a time drain briefly and put into pan. Cook until lightly browned, over medium high heat, 5 minutes on each side turning once.

Remove fish to a warm serving platter and keep warm; add rest of butter and garlic on top of fish. Makes 4 to 6 servings.
