DUSTY'S CHOWDER 
1 lb. bacon
3 lbs. potatoes
3 lg. onions
2 or 3 lbs. of misc. fish & scallops
1 lb. butter
1 jar Snows clam juice or equivalent
8 cans evaporated milk
Salt & pepper to taste

Cut up bacon into 1/2 inch long pieces. Fry bacon, when almost done, fry up onions with bacon. Cut potatoes 1 inch pieces. Boil in large pot. When potatoes are still firm, 3/4 way cooked, drain water. Simmer potatoes in 1 pound of butter. Marinating the potatoes gives them and chowder super flavor.

After butter is absorbed into the potatoes, add evaporated milk and bacon. Cook 1 hour on low. Thin chowder with milk or light cream only. Don't ever add water to Dusty's Chowder. You can thicken to taste with instant potatoes. If you can catch Jim Crowell and he sells you some fresh fish thicken the chowder with Chatham catch. If I catch anybody serving this chowder at the Hyannis Chowder contest I will sue.
