TEXAS STRAW HATS 
1 c. chopped onion
2/3 c. chopped celery
2/3 c. chopped green pepper
3 tbsp. fat
2 lbs. ground beef
2-3 tsp. chili powder
2 tsp. salt
1/2 tsp. thyme
1/4 tsp. pepper
2 (6 oz.) cans tomato paste
1/2 c. catsup
2 c. water
2 tsp. Worcestershire sauce
Dash of Tabasco sauce
2 (6 oz.) pkgs. corn chips
2 c. shredded sharp cheese

In large skillet, cook onion, celery and peppers in hot fat until tender but not brown. Add hamburger and brown lightly. Add remaining ingredients except corn chips and cheese; simmer uncovered 1 hour, stirring occasionally. Serve the meaty sauce on corn chips and top with cheese. Serves 6 to 7.
