SWEET HERB SORBET 
1/2 c. Superfine sugar
1 c. water
1/4 c. spearmint or apple mint leaves, lemon balm, scented geranium or rosemary
Juice of 1 lemon
1 egg white
Spearmint leaves for decoration

Bring to boil the sugar and water, stirring until sugar is dissolved. Chop herbs and add to pan. Cover; remove from heat; let mixture infuse 20 to 30 minutes. Test for flavor. Strain and add juice. Freeze 2 to 3 hours in freezer tray.
