EASY CARROT CAKE 
3 jars Gerber strained baby food carrots
2 c. sugar
1 c. oil
4 eggs
3 c. flour
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1 1/2 tsp. cinnamon
1/2 c. chopped nuts (can use walnuts, pecans or black walnuts)

Beat eggs until foamy, add sugar, baby food and oil. Beat well. Add all other ingredients except nuts and beat well. Stir in nuts. Pour into greased and floured tube pan. Bake at 300 degrees, for 1 1/2 hours or until cake springs back when lightly touched. Remove from pan and let set until completely cooled.

FROSTING:

1 (3 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
1 box 10X sugar
1 tsp. vanilla

Beat well cream cheese and butter. Add vanilla and sugar, beating well. Frost cooled cake.
