HIGH FIBER BRAN MUFFINS (Quick
Bread)
 
2 c. wheat and/or oat bran
1 1/4 c. skim milk
1 c. all-purpose flour
1/4 c. brown sugar
1/2 c. raisins
2 tsp. baking powder
1/2 tsp. baking soda
1/4 c. butter, melted
1/4 c. egg beaters

Combine bran and let stand 5 minutes. Combine next 4 ingredients; set aside. Mix butter and egg-beaters into bran mixture. Stir in flour mixture and raisins just until blended. Spoon into 12 greased 2 1/2 inch muffin cups. Bake at 400 degrees for 18 minutes or until done.
