1 c. black-eyed peas, drained 1 can white hominy 2 med. tomatoes, seeded & chopped 4 green onions, very thinly sliced 2 garlic cloves, minced 1 med. green pepper, finely chopped 1/2 c. chopped onion 1/4-1/2 c. chopped fresh cilantro 1 c. picante sauce Combine all ingredients; mix lightly. Cover; chill at least 2 hours or up to 24 hours, stirring occasionally. Drain. Makes 7 cups. |
