HECKER'S GREAT LEMON SHORTBREAD | |
2 c. flour 2 pinches salt 1 c. butter, at room temperature 1/2 c. superfine sugar 1 tsp. vanilla 2 tsp. grated lemon rind Preheat oven to 350 degrees. Stir flour and salt together. Set aside. In a large bowl, cream the butter, sugar and vanilla until mixture is light and fluffy. Add the lemon rind and mix. Add the flour and salt mixture and beat until thoroughly blended. Press dough into ungreased 8x8 inch pan. Bake for 25-30 minutes or until lightly colored but not brown. Cool thoroughly before cutting into 2x1 inch bars. Yield: 32 bars. Great! |
