DIJON PORK CHOPS 
4 boneless loin pork chops
1/2 c. dry bread crumbs
3 tbsp. Dijon mustard
3 tbsp. lemon juice

Heat oven to 375 degrees. Place bread crumbs in shallow dish, combine mustard and lemon juice. Blend well. Dip both sides of each pork chop in mustard mixture, then in bread crumbs to coat. Place in spray coated baking pan. Bake at 375 degrees for 30 to 40 minutes until pork is no longer pink. Turning over halfway through baking. 4 servings.
