CREAMY COCONUT MOLD 
1 1/2 c. cold water
2 envelopes unflavored gelatin
1 (24 oz.) carton cottage cheese
1 (14 oz.) can sweetened condensed milk
1 (3 oz.) pkg. cream cheese, softened & cut into sm. pieces
1 c. coconut
1 c. nuts, chopped
1/2 tsp. almond extract
3 c. fresh fruit, cut into bite-sized pieces

Lightly oil 1 1/2 quart mold. Sprinkle gelatin over water in small saucepan over heat, stir until dissolved. In large bowl mix cottage cheese, milk, cheese, coconut, nuts, extract; mix well. Stir in gelatin. Refrigerate for 10 minutes until slightly thickened. Stir, pour in mold. Refrigerate 3 hours until firm. Serve with fruit.
