CRANBERRY CHEESE BREAD 
1 3/4 c. flour
1/4 c. oat bran
2 tbsp. wheat germ
1/2 c. sugar
1/2 c. brown sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt (optional)
2 tsp. grated orange peel
2 tbsp. shortening
Juice of 1 orange (add water to make 3/4 c.)
1 1/2 c. shredded Cheddar cheese
1 egg, beaten
1 c. cranberries, halved
1/2 c. chopped walnuts

Add flour, bran, wheat germ, sugars, baking powder, soda and salt in a large bowl. Cut in shortening. Add orange juice, peel, cheese and egg; mix. Add cranberries and nuts.

Pour into pan, sprinkle top with oatmeal. Bake 60-70 minutes. Test with toothpick in center. Remove from pan immediately; let stand 6-8 hours before serving. Cook in a 9x5x3 loaf pan (greased), 350 degree oven preheated. May be cooked in small loaf pans for gift giving.
