RHUBARB BREAD PUDDING 
2 c. rhubarb, peeled and cut up
10 tbsp. sugar
2 c. soft bread crumbs
1 tbsp. grated lemon rind
1 1/2 tsp. lemon juice
1 c. milk
1 egg
Butter

Beat first 5 ingredients well and stir into milk and egg. Place in buttered baking dish and dot top with butter. Bake at 350 degrees for 45-50 minutes.
