HERB PILAF 
1 c. plain rice, or converted
1 stick butter
2 med. onions, finely chopped
1/2 tsp. leeks
1/2 tsp. shallots
2 c. chicken broth
Mixed herbs

Put 1 stick butter in a frying pan. Add onions, leeks, shallots and rice. Put over moderate heat, watch carefully as the onions brown easily. Add more butter if necessary; it will all be absorbed. Cook until rice is browned; watch that is does not burn. Pour 2 cups chicken broth over the whole, add salt and cover. Cook until rice tests done. Add mixed herbs and a teaspoon of butter.
