LEEK POTATO SOUP
(PURJOPERUNAKEITTO)
 
3-4 leeks
1 onion
5-6 potatoes
4-5 c. water
Salt and pepper
Herbs
4 oz. cream
Parsley, leek rings

Pare potatoes and onion. Chop potatoes, onion and leeks. Boil in water 20-30 minutes until tender. Puree the soup with blender or mixer. Return to boil, add seasonings and cream. Top the soup with cut parsley and leek rings.
