DIET RAISIN CAKE 
1 c. unsweetened applesauce
2 lb. Sweet and Low (any sugar substitute powder)
2 c. raisins
3/4 c. oil
1 tsp. baking powder
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
2 c. flour
2 c. water

Cook raisins in water until the water is gone. Let cool. Mix all the ingredients together. Bake in loaf pan for 1 hour at 325 degrees.
