3 c. hot mashed sweet potatoes
2 tbsp. butter
2 c. sugar
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
3 eggs
1 c. buttermilk
1 tsp. baking soda
2 (8 inch) unbaked pie shells or 1 (10 inch) unbaked pie shell

In a large bowl combine mashed potatoes and butter. Combine sugar, baking powder, nutmeg and cinnamon, then add to the sweet potatoes. Beat eggs until frothy. Add baking soda to buttermilk. Mix all ingredients. Pour in unbaked pie shell. Bake 10 minutes at 400 degrees. Reduce heat to 300 degrees and bake about 45 minutes.
