STUFFED CAULIFLOWER 
1 whole head cauliflower
2 tbsp. butter
2 tbsp. flour
1 c. milk
1/2 tsp. salt
1/4 tsp. pepper
2 hard cooked eggs, chopped
2 tbsp. chopped pimento
3/4 c. chopped green onion
3/4 c. buttered crumbs
2 tbsp. grated cheese

Cook whole cauliflower in 1 inch salted boiling water for 20 minutes. Remove and cool. Melt butter; add flour and gradually stir in milk. Cook until smooth and thick. Add seasoning, egg, pimento, and onion to sauce. Preheat oven to 375 degrees. Place cauliflower on buttered pie plate. Remove top of cauliflower and fill center with 1/2 of the sauce and replace top. Pour remaining sauce over cauliflower and sprinkle with crumbs and cheese. Bake at 375 degrees for 30 minutes. Serves 8.
