CREAMY APPLE SOUP 
2 lbs. tart apples
Juice of half a lemon
4 tbsp. unsalted butter
4 c. finely chopped onion
4 c. rich chicken stock
1/4 tsp. powdered ginger
1/8 tsp. freshly grated nutmeg
Salt and freshly ground pepper to taste
1 pt. heavy cream
Pinch of salt
4 tbsp. Calvadoes, apple brandy or bourbon
2 tbsp. chopped crystallized ginger (optional)
