RED BEANS AND RICE 
2 lbs. dried red beans
1 lb. salt pork, cut into 1 inch cubes
1 c. chopped onions
1/2 c. chopped celery
2 tbsp. vinegar
2 bay leaves
1 tsp. salt
1/2 tsp. pepper
Hot cooked rice
Hot sauce

Sort and wash beans; place in a large Dutch oven. Cover with water and bring to a boil. Add next 6 ingredients; stir gently.

Reduce heat; cover and simmer 2 to 2 1/2 hours or until beans are tender and a thick gravy is formed. Add water to prevent beans from sticking, if necessary. Stir in salt and pepper. Serve with rice and hot sauce. Makes 8-10 servings.
