RED BEANS AND RICE 
2 slices bacon, diced
2 tbsp. chopped celery
1 c. water
1/2 tsp. salt
1/2 c. chopped onion
15 - 16 oz. can kidney or small red beans, drained
1/4 tsp. garlic powder
1/8 tsp. hot pepper sauce
1 sm. bay leaf
Warm, cooked rice

Lightly brown bacon. Add onion and celery; cook until tender. Add beans, water, seasonings. Bring to boil and simmer covered for 30 minutes. If thicker consistency is desired, add about 1/3 cup more mashed beans. Serve over rice. Serves 3 to 4.
